Pasilla Bajio originates from Mexico, it is also known as Chile Negro or Mexican Negro. Pasilla means Little Raisin in Spanish and refers to the way the dark green chilli fruit turns deep brown and slightly wrinkled, when it’s fully mature and dried.
The plant grows well in a pot to about a meter in height and would grow bigger, if you plant it in the ground. Pasilla Bajio produces amazing looking mild pods. First the pods start off dark green and end up dark brown, when they are fully ripe.
Used in the famous Mexican Mole sauce. You can dry the pods and make a flavoursome spice.
