Aji Crystal Chilli
C. Baccatum
Aji Crystal Chilli is one of Charlotte’s favourite chilli varieties. It is a Baccatum from Curico in Chile. It is such an amazing producer and it’s one of the first to pod up and has a long season.
The plant grows well in a 30 cm pot to about 60-90 cm and produces yields of 10 cm long pendant shaped pods. The chilli pods mature from light green, through pale yellow and then to red. Apparently the chillies are best eaten immature, when they are yellow. They have a delicious citrus flavour and would be great for making a salsa.
All in all Aji Crystal is easy to grow, great producer of delicious pods and it looks spectacular when it’s full of these pale yellow pods.
Click on this link ‘Hot Salsa’ for a great recipe from Jamie Oliver. We use one more chilli than Jamie does and it is delicious.
Flavour wise: Citrus delicious taste.
Heat level: Medium
