Guajillo chilli peppers are commonly used in the Mexican cuisine along with Anchos (A dry Poblano chilli is called Anchos).
The plant grows to about a metre tall and is very easy to grow; furthermore they have a long season. The pods are thick and leathery and about 11 cm long and 2.5 cm wide. They start off green and end up a dark red colour.
In Mexico it’s one of the most popular chillies for making salsa. It may be used in any kind of meal or to make a toasted Guajillo salsa. Excellent for an Ancho-Guajillo chilli sauce.
Flavour wise: Fresh they have a light sweet and tangy flavour. If you dry them they have a slight smokiness combined with a light tanginess kind of cranberry.
